I have a recipe for Molasses Spice Cookies (and I do mean SPICE) that I've been tweaking over the years. I finally found a good source of Chai Masala so I'm going to ditch all the "2 tsp of this, 2 tsp of that" for 1/4 cup of the premixed stuff.
Since it's now officially using chai spices I thought I should make it as much like the finished drink as possible. However, there's no liquid in this for which tea can be substituted, and no milk for which sweetened condensed milk can be substituted. How can I add tea and sweetened condensed milk to this recipe? Ground/powdered tea leaves in with the spices, maybe, but that's all I can think of.
Regardless of any chai-ifying ideas you may come up with, you should try these cookies. If you don't have chai masala, use the following instead:
2 teaspoons ground allspice
2 teaspoons ground ginger
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg
2 teaspoons ground cardamom
1 teaspoons ground cloves
1 tsp of mace or pepper or more of one of the above spices
I use a food processor to mix, and sometimes add a bit of the dry ingredients before the molasses to avoid sticky puddles underneath the blades that never get mixed in. Also, chilling is not optional unless you like cookie-flavored puddles.
